What is Hatchery?

A new food platform, a new generation


Hatchery is a platform dedicated to supporting and growing China’s next generation of food entrepreneurs and concepts. Our purpose is bringing more of the world’s unique flavours and cuisines to China. We’re doing this by partnering with entrepreneurs, investors and the community to support, showcase and hatch creative new food ideas in China. We offer both a platform for China’s food community, and a modern dining space in Beijing where new concepts and products can be enjoyed by the wider public.

We help brands grow quickly and sustainably, helping them build awareness,networks and market knowledge while avoiding the risks and overheads that traditionally come with starting a business, particularly in China. As an incubator, Hatchery supports entrepreneurs launching either a hospitality concept — such as a restaurant, cafe, bar, bakery, or food delivery service — or a new food and beverage product. We’re all about supporting and showcasing food ideas worth growing. Hatchery hosts and develops fresh new concepts and products throughout the year, open for the public to enjoy. It’s also why, as an entrepreneur at Hatchery, you can get access to collaborative working experiences and food experts to bounce ideas off while planning and growing your new venture. Our five-step HatchTrack™ process is tailored specifically to China’s commercial and consumer landscape, and to the many unique laws and requirements of starting a food and beverage business in this exciting and dynamic market.

A process built to scale


As part of the HatchTrack™ incubation process, entrepreneurs develop a business proposal for their concept or product, and then get access to the Hatchery Space and venue partners where they can test and adapt their ideas while growing a consumer-base of early adopters. Entrepreneurs can also connect with consumers, investors, mentors, chefs and other experts to help them along the way. In addition, we provide support on business model planning, market entry and brand strategy, supply chain management, food safety and quality testing and systems, manufacturing, packaging, and other product development services.

Stew Johnson Beijing



Stew is a serial entrepreneur with China startup and growth stage experience in both education and hospitality industries. With fluent Mandarin, he is passionate about innovative business models, operations systems and investment strategy. Stew likes the finer things in life and you’ll often find him sipping whiskeys and nibbling on cheese, until he finds the next great Chongqing hotpot.

Alex Worker Beijing



Alex has a background in corporate agribusiness, hospitality, startups and marketing. Alex balances corporate business with startup interests in China, believing both large and small businesses can learn more from each other. When he’s not with his young family or enjoying New Zealand wine and produce, he’s focused on driving Hatchery management, operations and marketing.

Platform Director

Ben is a multi-talented consultant with experience in the legal, financial and hospitality sectors. Last year, he opened Chongqing’s first large-scale gastropub after a stint in the corporate world in Singapore. Ben’s love for hospitality has driven him to Hatchery where he helps entrepreneurs achieve their dreams and where you’ll also find him waiting tables and mingling with diners.

With over fifteen years culinary experience in both commercial and professional kitchens in New Zealand and Australia, Dave leads Hatchery food and kitchen operations. Passionate about food safety, Dave has a degree in food science and brewing,and when he’s not cooking, you’ll find him with a craft beer in one hand and a surfboard in the other.

Concept Manager

JJ runs the front of house and concept operations for Hatchery. After leaving the finance world in London, he’s quickly made Beijing his home and is well known for his quick wit and warm hospitality. JJ is a keen tennis player, food aficionado and loves to cook.

Marketing Manager

Andrew left the technology industry to join Hatchery and drive marketing and communications. Passionate about offline and online marketing, he loves delivering memorable experiences for diners and in his spare time runs food pop-ups and DJs around Beijing.

Sous Chef

Tony gets things done. He’s in early, out late and runs the kitchen during service. You’ll often find him belting out songs at the top of his lungs in the kitchen, and he loves exploring new western cuisines.

Legal Advisor

Grace is a talented corporate lawyer who enjoys balancing big business with startups and growing food businesses. Originally from Sichuan, Grace calls Beijing home and enjoys travelling the world in search of new tastes and sights.

Elisa Hatchery Beijing Design


Design Advisor

Elisa is an experienced interior designer with a design background from Panama, Paris, London, Hong Kong and more recently Beijing. Elisa speaks five languages and has a passion for furniture design.
